You might want to take a look at sensor networks. There's actually a lot of effort going into connecting small devices (among whom are specifically iPAQs) and doing distributed computing (in-network collaboration and processing).
A good starting point is the Center for Embedded Netowrk Sensing (CENS) at http://www.cens.ucla.edu/ .
Depending on what you are looking for there might already be communities. CENS has done projects on iPAQs (in particular) that includes (but is in no way limited to) running FFTs. There's even a development framework called Em* being offered for development on these platforms.
