You can't beat a good old serial console.

A lot of the newer servers will also give you bios level access across the
serial port too. Some of the newer HP intel hardware goes a step further,
and replaces the traditional bios with a script-friendly command line
interface.

2.6 has a netconsole feature which put a console out over UDP. This is
handy for catching and logging panics, but you don't get console access
for the first stages of system booting.
